The Direct Cooking Method

What is the direct cooking method?

For steaks and other faster cooking cuts of meat, you’ll want to set up your BBQ for the direct cooking method.

The direct cooking method requires the ashed over Heat Beads® BBQ Briquettes to be spread out on the bottom grill directly under the food being cooked.

Direct cooking is used for grilling steaks and other meats of less than 4cm thickness, and also for hotplate and wok cooking. Use approximately 3kg of Heat Beads® BBQ Briquettes for direct cooking, or one full Heat Beads® BBQ Chimney.

If you are using the direct cooking method in a kettle, flare up caused by fats falling on the briquettes may be reduced by closing the bottom vents while cooking (but the lid must be removed).
