The Indirect Cooking Method

What is the indirect cooking method?

In this method the Heat Beads® BBQ Briquettes are placed at the sides of the kettle barbecue. The food being cooked is placed in the centre, with a drip tray underneath in order to collect fats and oils and prevent flare ups.

The Indirect Cooking Method

This method of cooking is ideal for roasts, such as pork, lamb or whole poultry and other large cuts of meat, which may take a longer than half an hour to cook.

With the lid on the kettle and the vents open, hot air will circulate around the food and provide even and consistent cooking. There is no need to turn the food.

Getting started.

  • For a high heat, use approximately 3.5kg of Heat Beads® BBQ Briquettes, or one Heat Beads® BBQ Chimney filled as high as you can.
  • For a medium heat, use approximately 3kg of Heat Beads® BBQ Briquettes, or one Heat Beads® BBQ Chimney filled to level with the top.
  • For a low heat, use approximately 2.4kg of Heat Beads® BBQ Briquettes, or a Heat Beads® BBQ Chimney filled to the three quarter level.
