Spit roast tips: Basting
Basting your roast is a great technique to keep your meat nice and moist, and of course, it adds even more incredible flavour. We’ve even been told that a slightly overcooked roast turns out moist if you’ve been religious with your basting!
Spitmaster Terry McEvoy recommends this simple basting sauce recipe (recommended for beef or lamb)…
- ½ cup beer
- ½ cup cider vinegar
- 1 tablespoon extra virgin olive oil
- 2 good slugs of Worcestershire sauce
- 1 teaspoon garlic, minced
- Cayenne pepper
- Celery salt
Simply mix all ingredients and brush on your roast every 20 minutes or so.
