Cooking times for spit roasts

“The most common question I get from spit roasters is how long it takes to cook a particular type of meat/poultry. To that question, I tell them to use this as a general rule of thumb.” – Terry McEvoy of Spithouse Spits (www.spithouse.com.au).

General cooking times

Lamb – 1 hour per kilogram
Pork – 1 hour 20 minutes per kilogram
Beef – 40 minutes per kilogram
Chicken – 2 hours for a size 16 chicken
