The Heat Beads® Christmas Turkey BBQ Recipe

Let’s talk turkey. When it comes to succulent centerpieces for the family Christmas table, a turkey cooked to perfection is just about as good as it gets. With our simple and straightforward recipe for an impeccable BBQ bird, any festive feast can feature a guaranteed winner – a plump, juicy turkey, slow cooked to perfection in the backyard BBQ. And with our delicious stuffing, a bird in the hand is an absolute must-have.

Ingredients

  • 1 x 6kg turkey (serves 12 people – check out our Turkey Cook-Time Calculator to find appropriate cooking times by weight)
  • 1 cup white wine
  • 1/2 cup brandy

Stuffing

  • 1 spanish onion, chopped
  • 2 tablespoons fresh rosemary, chopped
  • 125g pancetta, chopped
  • 2 cups fresh breadcrumbs (we recommend Burgen Rye)
  • 1 lemon, sliced
  • sea salt & cracked pepper
  • 5 spanish onions cut into small wedges
  • 1 tablespoon butter

While your Heat Beads® BBQ Briquettes are ashing over, thoroughly wash the turkey and dry with a kitchen towel.

Time to prepare the stuffing. Heat a small amount of oil in medium sized fry pan and cook onion wedges for a couple of minutes. Add pancetta, and continue cooking until the pancetta begins to crisp. Next, throw in the chopped rosemary and stir for a further 30-40 seconds.

Transfer to a bowl and allow the mix to cool for a couple minutes. Mix in breadcrumbs.

Stuffing, done. Now it’s time to transfer it to the turkey. Loose the skin around the breast and place a small amount of stuffing under the skin. Stuff the cavity with the remaining breadcrumb mixture and the lemon slices – you might need to tie the legs together with kitchen string once you’re done.

Nearly there. Season the turkey and rub with butter. Scatter the chopped onion into your baking tray and place the turkey on top. Just before placing it in your kettle, pour over the wine and brandy (while the tray is still outside the BBQ!).

Put your bird in the BBQ, close the lid and open the vents the whole way. Please refer to our convenient Turkey Cook-Time Calculator to figure out how long you’ll need to cook for.

Take out of your BBQ and arrange on a platter surrounded by veggies and don’t forget the gravy.
