Swordfish Skewers BBQ Recipe
BBQ expert Colin Magee’s delicious Swordfish Skewers BBQ Recipe as seen on TEN’s real BBQ series, Keepers of the Flame – the Ultimate BBQ Adventure.
- 800gm-1kg swordfish, skin removed & cut into 10 chunks
- 1 red onion, quartered
- 10 fresh bay leaves
- 10 slices prosciutto
- 2 lemons, halved
- juice of 1 lemon
- ½ bunch parsley, chopped
- ½ bunch chives, chopped
- ½ bunch dill, chopped
- olive oil
To assemble each skewer, start with ½ a lemon.
Then wrap a slice of prosciutto around a piece of swordfish and skewer.
Now add a piece of onion and bay leaf. Repeat the process.
Complete the skewer with remaining ½ lemon.
Oil and grill skewers over hot coals for 5 to 10 minutes or until fish is cooked through.
For the quick and easy herb dressing, combine herbs, olive oil and lemon juice in a bowl. Season to your liking.
Serve barbecued swordfish skewers with herb dressing, a mixed green salad and grilled sourdough bread.
