Butterflied Chicken BBQ Recipe

- 1.5kg free range chicken
- 250 gm mascarpone
- 1 small bunch rosemary, chopped
- zest of 1 lemon
- salt & pepper
In a mixing bowl, combine lemon zest, rosemary, mascarpone, salt & pepper.
Gently lift skin away from the chicken so you can spoon above mixture on to the flesh. Massage mixture into chicken until it is well coated.
Butterfly the chicken by cutting out the back bone.
Put butterflied chicken in a grilling basket/rack and place on the BBQ slightly away from the hot coals.
Close the BBQ lid and cook for 35-45 minutes or until chicken is cooked through.
Serve with sourdough (drizzled lightly with olive oil then grilled) and rocket salad.
