Real/Simple Beer Can Chicken

Ingredients

  • Whole chicken (approx. 1.5kg)
  • A 375ml can of a good beer
  • 2 cloves garlic, flattened
  • Extra virgin olive oil
  • BBQ rub or spice mix (try this one)

Equipment

  • Solid fuel BBQ, such as a Weber kettle BBQ
  • 3kg Heat Beads® BBQ Briquettes
  • Aluminium BBQ tray

Method

Light approx. 2.5kg of Heat Beads® BBQ Briquettes, and set up your BBQ for the ‘indirect’ method with coals on each side and an aluminium BBQ tray in the middle.

Grab a can of beer, and pour out (or drink!) around a quarter of the can.

Put a couple of crushed cloves of garlic in the can.

Insert the open beer can into the cavity of the chicken, using the two legs and the can as a tripod to keep it upright.

Give the chicken a rub with olive oil, then add some flavour with your favourite BBQ rub or spice mix.

Place the upright chicken in an aluminium BBQ tray and put the tray onto the middle of the BBQ.

Throw a handful of pre-soaked smoking wood chips directly onto the coals.

Replace the BBQ lid and ensure the vents are open. Check the chicken after an hour, it will be ready when the internal temperature in the thickest part of the meat reaches 75° and the juices run clear.

When the chicken is ready remove from the BBQ and using BBQ tongs, carefully lift the chicken off the beer can  (taking great care to not spill the beer as it will be extremely hot) and slice to serve.
