Big Breakfast BBQ Recipe
BBQ expert Colin Magee’s delicious Big Breakfast BBQ Recipe as seen on TEN’s real BBQ series, Keepers of the Flame – the Ultimate BBQ Adventure.
Ingredients
- 6 large tomatoes
- 6 pieces kaiserfleisch, rind removed
- 6 small eggs
- 1 bunch basil
- 1 large pork sausage
- salt & pepper
Potato Bread
- 6 large desiree potatoes, wrapped in foil
- 4 spring onions, chopped
- 1 tablespoon buttermilk
- 2 tablespoons plain flour
- oil
Method
Cut the top off the tomatoes and scoop out flesh.
Place a basil leaf and crack an egg into each tomato. Season to your likin
Place tomatoes on grill bars over a gentle heat and cook for 15 minutes with the lid on.
Add the sausage and kaiserfleisch to the BBQ. Grill until cooked through.
When ready, remove tomatoes, sausage and kaiserfleisch from the grill for plating up.
Potato Bread
Place potatoes (wrapped in foil) onto the hot coals and cook until soft. Remove and set aside.
Peel potatoes and mash them with the back of a fork. Add buttermilk, spring onion and flour. Season to your liking.
Turn out mixture onto a floured board and knead until firm. Shape into small rounds.
Lightly brush the bread with oil and add the potato bread to the hot grill until golden brown on both sides.
Assemble all your Big Breakfast BBQ items onto a plate and serve with tomato or HP sauce.
