Basic meat cuts
Whilst we love experimenting with different cuts of meat on the BBQ, it did take us awhile to learn all of them – especially the cuts that you don’t always get at the general supermarket. Knowing exactly which part of the animal a particular cut relates to will allow you to better understand how the cut should be handled and grilled.
Beef and Lamb
Meat & Livestock Australia details the different cuts of beef and lamb with a handy diagram of the animal and its parts, including the neck chop, chump chop and leg (tunnel-boned or bone in).
Chicken
The Australian Chicken Meat Federation explains the different cuts of chicken including details on the split breast with/without back, wing mid sections with/without tips and giblets.
Now you can head to the butchers and select your meat with confidence!
