Winter Roast Series: Pork BBQ recipes & tips

Crispy, golden crackling
This is by far the number 1 query we get when it comes to roast pork on the BBQ. Among other factors, it is essential to use an extremely high heat to achieve the perfect crackling. Learn the other tricks in our Crackling Pork BBQ Recipe.
A delicious pork marinade
Spitmaster Terry McEvoy of Spithouse Spits shares an easy marinade that will go great with pork:
- 1 cup bourbon
- 1 cup brown sugar
- 2 tablespoons extra virgin olive oil
- 2 tablespoons seeded mustard
- 1 cup Worcestershire sauce
Simply mix together ingredients in a bowl & rub generously into your meat.
What to look for when buying pork
- Meat that is pale pink (never white)
- Firm to the touch
- Slight marbling, not a lot of fat
And don’t forget to rest your roast before serving.
