Cajun Lamb Chops
Lamb chops in a homemade Cajun spice rub, grilled hot over Heat Beads® briquettes for a smoky, spicy crust. Quick, simple and full of flavour.

Ingredients
- For the Lamb Chops:
- Lamb chops: 8 chops (serves 4)
- Olive oil: 2 tablespoons
- Cajun seasoning: 2 tablespoons (see recipe below)
- Salt: 1 teaspoon
- Black pepper: 1 teaspoon
- For the Cajun Seasoning:
- Paprika: 1 tablespoon
- Onion powder: 1 tablespoon
- Garlic powder: 1 tablespoon
- Dried thyme: 1 teaspoon
- Dried oregano: 1 teaspoon
- Cayenne pepper: 1 teaspoon (adjust to taste)
- Ground black pepper: 1 teaspoon
- Salt: 1 teaspoon
Method
Preparation: Preheat your BBQ with Heat Beads Easy-Lite Briquettes. In a bowl, mix together all the ingredients for the Cajun seasoning. Rub the lamb chops with olive oil and season generously with the Cajun seasoning, salt, and black pepper. Let the chops sit for a few minutes to let the flavors meld.
Grilling Setup: Set up your BBQ for direct heat at 200°C (392°F). This will give you a hot, even grill surface to achieve a perfect sear on the lamb chops.
Cooking the Lamb Chops: Place the lamb chops on the grill and cook for about 3-4 minutes on each side, or until the meat reaches an internal temperature of 60°C (140°F) for medium-rare. Adjust cooking time based on your preferred doneness. Make sure to get a nice char and crispy edges.
Serving: Remove the lamb chops from the grill and let them rest for 5 minutes to retain their juiciness. Serve with a side of corn on the cob and creamy coleslaw for a true Cajun experience.
