Winter Roast Series: BBQ recipes for side dishes

DIY barbecued veggies
We really do think barbecued veggies are one of the easiest sides to any meal. As we like to say, the high dry heat of cooking over coals caramelises the plant sugars in vegetables producing that sweet, smoky, chargrilled flavour every time. Simply pick your favourite vegetable (potatoes, onions, carrots, zucchini, asparagus, etc.), drizzle with olive oil, season and cook to your liking. Get creative with herbs – we love rosemary, thyme and oregano.

Mexican Corn BBQ Recipe
This is a Mexican take on the traditional Barbecued Corn on the Cob. Just add smoked paprika, cumin, chilli and lime to this humble dish and you’ll create a delicious flurry of zesty flavours.

Roast Cheese BBQ Recipe
There are times when you should allow yourself to indulge – eating gently roasted cheese on the BBQ is one of them. Serve with freshly sliced baguette. No-carb dieters watch out!
