Twisted Bacon & Pork Belly Skewers
Pork belly cubes twisted with streaky bacon on skewers, rubbed and cooked over indirect heat until crisp. Two kinds of pork, one BBQ skewer.

Ingredients
- Bacon: 12 slices
- Pork belly: 500 g (1.1 lbs), cut into 1-inch cubes
- Olive oil: 2 tablespoons
- BBQ rub: 2 teaspoons (your favorite blend)
- Salt: 1 teaspoon
- Black pepper: 1 teaspoon
Method
Preparation: Preheat your BBQ using Heat Beads Blue Bag. Cut the pork belly into long strips, then thread them onto skewers. Season generously with BBQ rub. Wrap each pork belly strip with streaky bacon, securing the ends with toothpicks to keep everything in place. Brush the skewers with olive oil and sprinkle additional seasoning for a burst of flavor.
Indirect Heat Setup: Set your BBQ for indirect cooking at 180°C (350°F). Position a drip tray beneath the cooler side of the grill to catch any rendered fat.
Grilling the Skewers: Place the skewers on the cooler side of the grill. Cook for about 20 minutes, turning occasionally, until the pork belly reaches an internal temperature of 82°C (180°F) and the bacon starts to crisp. For the perfect finishing touch, move the skewers to the hotter side of the grill and sear for 5 minutes, turning frequently, until the bacon is crispy and caramelized.
Serving: Remove the skewers from the grill and let them rest for a few minutes to seal in the juices. Serve hot with a side of grilled vegetables or your favorite dipping sauce.
