Turkey Satay BBQ Recipe
Ingredients
- 250g turkey steaks cut into strips
- 1 tablespoon ginger purée
- 1 teaspoon garlic purée
- 1 teaspoon lemongrass purée
- ½ teaspoon turmeric powder
- fish sauce
- 1 teaspoon sugar
Satay Sauce
- 1 medium red chili
- 2 tablespoons chopped coriander leaves
- 2 tablespoons crunchy peanut butter
- 2 tablespoons soy sauce
- 150ml coconut milk
- juice of ½ lime
- fish sauce
Method
Satay
Combine the purees, fish sauce and turmeric together and mix into a paste. Then rub the turkey thoroughly with the marinade. Allow to stand for ½ an hour then skewer onto bamboo skewers.
Make the satay sauce.
Prepare your BBQ for the direct cooking method, prepare the satay stick, and bbq until cooked then cover with the sauce.
Satay Sauce
Pound the chili and coriander in a mortar to make a paste.
Add the peanut butter and combine.
Stir in the remaining ingredients, and then transfer to a saucepan.
Bring to the boil and simmer until thick. Season with fish sauce and use straightaway.
This sauce doesn’t keep too well, as it tends to set when it cools and will separate if reheated. But it tastes so great, there probably won’t be any left over anyway.
