Slow Cooked Beef Ribs BBQ Recipe
Celebrity chef, author & restaurateur, Adrian Richardson, cooks his Slow Cooked Beef Ribs BBQ Recipe on highly rated TV show Good Chef Bad Chef.
Ingredients
- 5 x beef short ribs
- 1 tablespoon salt
- olive oil
- 1 ½ tablespoons smoked paprika
- 1 tablespoon ground cumin
- ½ teaspoon cayenne pepper (optional)
- ½ tablespoon black pepper, freshly ground
- 1 clove garlic, crushed
- 1 large onion, thinly sliced
- 1 red chilli
- 2 tablespoons brown sugar
- 1 cup chicken stock
- 1 can chopped tomatoes
- ½ bunch coriander
- 2 tablespoons BBQ sauce
- 2 tablespoons worcestershire
- 2 tablespoons ketchup
- 1 can coke
Jacket potatoes
- potatoes of your choice
- salt & pepper to taste
Method
Prepare your BBQ and light your briquettes for the Indirect method.
Once briquettes have ashed over, place a large pan/pot on the grill.
Rub salt all over your beef ribs then place in the pan (with the olive oil) and brown.
Add the dried spices to the pan (smoked paprika, cumin, pepper) and mix until well coated.
Add the garlic and onion and sauté until soft.
Add the remaining ingredients and mix well.
Cover the BBQ and allow the ribs to cook low and slow for about 2.5 hours. Check and stir occasionally.
About 30-40 minutes before your ribs are done, add potatoes (seasoned as desired & wrapped in foil) to the BBQ.
When beef is tender and ready, serve with the steaming hot jacket potatoes.
