Real/Simple Roast Pork with Crackling
The Heat Beads® Real/Simple BBQ Series celebrates simple recipes, cooked the real way – over Heat Beads® BBQ Briquettes. Try this roast pork, the crackling will knock your socks off.
- 1.5kg rolled pork loin, rind scored
- Olive oil
- Cracked pepper
- Solid fuel BBQ, such as a Weber kettle BBQ
- 3kg Heat Beads® BBQ Briquettes
- Aluminium BBQ tray
Light at least 3kg of Heat Beads® BBQ Briquettes, and set up your BBQ for the ‘indirect’ method with coals on each side and an aluminium BBQ tray in the middle. For perfect crackling you want a very high heat in your BBQ.
Give your pork a rub of olive oil and season generously with salt and cracked pepper. Make sure you let your pork reach room temperature before cooking.
Place the pork on the centre of the BBQ.
Replace the BBQ lid and ensure the vents are open. Be careful not to raise the lid on the BBQ too often, you want to keep it very hot.
The pork will be cooked when the internal temperature in the thickest part of the meat reaches 70°.
Slice and serve with apple sauce, cabbage salad and some beautiful roasted garlic potatoes.
