Guy Grossi’s Pizza Dough Recipe
Celebrity chef, author & restaurateur, Guy Grossi, shares his basic pizza dough recipe – to use with all your favourite pizza toppings…
Ingredients
- 4.5 cups Flour (add more if dough is sticky)
- 2 cups lukewarm water
- 2 tablespoons olive oil
- 30g fresh yeast or 15g dry yeast
- pinch of salt
Method
Put the water, oil, yeast and salt into bowl of an electric mixer fitted with a dough hook. Mix on low speed until yeast has dissolved.
Add flour and continue to knead for 15 minutes until dough is shiny and elastic. If the dough is sticky, add more flour.
Cover the bowl with a clean tea towel and rest in a warm area for 30-60 minutes until doubled in size.
When ready to use, flour your work surface and tip dough on to it. Then cut the dough into three portions.
Using your hands, work the dough into a small ball, bringing the sides in towards the bottom.
Put on to the tray and cover with a clean tea towel, then allow to prove for 15 minutes.
Press the ball of dough down, stretching it to cover the tray. It should be no more than 1cm thick.
Now the base is ready for your desired topping!
