Ingredients

  • Pork tomahawk chop (Needs to look
  • like a tomahawk steak)
  • Olive oil
  • Garlic
  • Fresh thyme
  • Salt/rub
  • Black pepper

Method

  1. 01 Preparation: Preheat your BBQ with Heat Beads Blue, Chimney, and Booster. Combine olive oil, minced garlic, chopped fresh thyme, salt, and black pepper in a bowl. Rub this mixture all over the pork tomahawk chops. Let the chops marinate for at least 10 minutes to absorb the flavors.

  2. 02 Reverse Sear Setup: Set up your BBQ for indirect heat, aiming for a temperature of around 120°C (250°F). This method will allow the pork to cook evenly and retain its juices.

  3. 03 Cooking the Pork: Place the marinated pork chops on the cooler side of the grill. Close the lid and cook for about 20 minutes, turning once, until the internal temperature of the meat reaches 60°C (140°F).

  4. 04 Searing: Increase the BBQ temperature to high, around 250°C (482°F). Move the pork chops to the hot side of the grill and sear for about 2-3 minutes on each side until they develop a golden-brown crust.

  5. 05 Resting and Serving: Remove the pork chops from the grill and let them rest for 5 minutes. Resting allows the juices to redistribute, ensuring a moist and flavorful chop. Serve immediately with your favorite sides, such as grilled vegetables or a fresh salad.

  6. Tip: Drizzle the chops with a bit of extra virgin olive oil and a squeeze of fresh lemon juice just before serving for an added burst of flavor.
