Ingredients

  • Dim sum wrappers: 10 sheets
  • Olive oil: 3 tablespoons
  • Soy sauce: 1.5 tablespoons
  • Sesame oil: 1.5 teaspoons
  • Salt/rub: 3 teaspoons
  • Black pepper: 1.5 teaspoons
  • Filling:
  • Ground pork: 300g (10.5 oz)
  • Gochujang (Korean chili paste): 3 tablespoons
  • Honey: 1.5 tablespoons
  • Finely chopped garlic: 3 cloves
  • Grated ginger: 1.5 teaspoons
  • Chopped green onions: 3 tablespoons
  • Chili flakes (optional): 1 teaspoon

Method

  1. Preparation: Preheat your BBQ using Heat Beads Briquettes, The Brown Bag for in-direct heat. For the filling, mix ground pork with gochujang, honey, garlic, ginger, green onions, and chili flakes. Ensure the filling is evenly combined. Lay out dim sum wrappers, spoon the pork filling in the center of each, and fold the edges tightly to seal.

  2. Seasoning: Brush the dim sims with olive oil, then lightly coat them in a mix of soy sauce, sesame oil, salt, and black pepper. Allow them to rest for 10 minutes to soak up the flavors.

  3. Grilling the Dim Sims: Set up your BBQ for indirect heat at 150°C (300°F). Place the dim sims on the cooler side of the grill, cover, and cook for 15 minutes to ensure the pork filling is cooked through. Move the dim sims to the hotter side of the grill, searing them for 2-3 minutes per side to achieve a charred and crispy exterior.

  4. Serving: Remove from the grill and rest for 2-3 minutes. Serve with a chili dipping sauce or a fresh Asian slaw for a complete dish.
