Coffee Queen of Puddings Aussie Style BBQ Recipe
- 1 madeira cake
- 3-4 ripe bananas
- 1 cup baileys cream
- 1 cup milk
- 100ml espresso coffee
- 100g dark chocolate (melted)
- 6 egg yolks
- 50g sugar
- ice cream or custard
Slice the madeira cake into 2-3cm slices and line the bottom of a round or square ceramic baking dish.
Peel and slice the bananas in half, and place them into a pot large enough so that they form a single layer. Pour the milk and Baileys cream over the bananas, and place the pot over a gentle heat to poach for 10 minutes. This will lightly soften the bananas and infuse the flavours.
Remove the bananas carefully from the poaching liquid and place on top of the madeira cake. Spoon half the poaching liquid over the bananas and then drizzle with the chocolate.
Combine the egg yolks with the sugar, baileys cream, the remaining half of the poaching liquid and coffee. Over a gently simmering pot of water, whisk the egg mixture continuously until thick, light and fluffy.
Pour the fluffy egg mixture over the top of the banana and sponge base. Place this in a medium-hot oven and bake until brown on top.
