- Turkey hindquarter
- Portugese style chicken spice
- Potatoes, pumpkin, broccoli
- Olive oil
- Salt & pepper to taste

- Cranberry jelly
- Gravy of your choice
Method
I do like roast turkey however a full turkey is too big for two people, turkey breast is usually too bland so I opt for the hindquarter.
This recipe is pretty basic. I first trip the hindquarter and truss it with cooking twine then rub it with a Portuguese style chicken spice which has the main ingredient of chilli and paprika and I roll the vegetables in olive oil.
I stack the ovens with briquettes on top, underneath and between the camp ovens.
I start the turkey first in the bottom camp oven and after 90 minutes added the vegetables in the top camp oven and cooked for a further 45 minutes.
