Brussels Sprouts with Bacon
Parboiled Brussels sprouts tossed with bacon and olive oil, then charred on the BBQ. A smoky side that turns sprout doubters into fans.

Ingredients
- Brussels sprouts
- Bacon
- Olive oil
- Salt/rub
- Black pepper
- (this could be a side for a steak dish)
Method
Parboil the Brussels Sprouts: Start by cutting the bottoms off the Brussels sprouts to help them cook evenly. Parboil the sprouts by placing them in boiling water for about 3-4 minutes. Once done, drain them and pat them dry with paper towels.
Toss with Olive Oil and Seasoning: Toss the parboiled Brussels sprouts in a bowl with olive oil, salt, and black pepper to coat them evenly.
Wrap with Bacon: Take a half slice of bacon and wrap it around each Brussels sprout. Secure the bacon with a toothpick or metal skewers to keep it in place during grilling.
Set Up the BBQ: Set up your BBQ for direct heat, aiming for a high temperature of around 200°C (392°F). Preheat with Heat Beads Lump Charcoal for that perfect grilling experience.
Grill the Bacon-Wrapped Brussels Sprouts: Place the wrapped sprouts on the grill and cook them hot and fast, turning occasionally, for about 10 minutes, until the bacon is crispy and the sprouts are tender.
Serve: Remove the Brussels sprouts from the grill. Drizzle with balsamic glaze and sprinkle with grated Parmesan before serving.
