BBQ Lamb Kofta
This BBQ Lamb Kofta recipe is taken from HEAT: The Way Forward is Good Food cookbook – an initiative of the charity HEAT which Australian Char is proud to be supporting.
Ingredients
- 1.5kg lamb, minced
- 1.5 onions, diced
- 1 tablespoon fresh mint, chopped
- 3/4 teaspoon black pepper
- 1 teaspoon Ras al Hanout
- 1 1/2 teaspoon sea salt
- olive oil for grilling
Ras al Hanout:
- 1 garlic clove, crushed
- 1 tablespoon balsamic vinegar
- 1 tablespoon dried oregano
- 1 tablespoon coarsely ground black pepper
- 1 tablespoon fresh thyme leaves
- 3 tablespoons olive oil

Mix well into homogeneous sticky paste, shape around bamboo sticks and grill on high heat using direct method, until lamb is cooked to your liking.
