BBQ Chicken with Mango and Tropical Marinade BBQ Recipe
Amazing flavours are created with BBQ Chicken and Mango & Tropical Marinade cooked over Heat Beads® BBQ Briquettes from Celebrity chef, author & restaurateur, Adrian Richardson, from the highly rated TV show Good Chef Bad Chef.
- 1 whole chicken
- salt and pepper
- 1 knob ginger, grated
- 3 cloves garlic, grated
- ½ red onion, finely diced
- 1 long red chilli, finely chopped
- juice of 2 limes
- 1 tablespoon fish sauce
- 1 tablespoon mirin
- 2 tablespoons light soy sauce
- bunch coriander, roughly chopped
- mango, thinly sliced
- spring onions, thinly sliced
- coriander, roughly chopped
- red capsicum, thinly sliced
- chives, thinly sliced
- olive oil
- lemon juice
Spatchcock the chicken (or ask your butcher to do it for you).
Mix the marinade ingredients together in a bowl.
Place the chicken in a deep tray and season with salt and pepper. Pour over the marinade and rub into the chicken.
Prepare your BBQ for direct cooking and when ready grill the chicken over a medium heat, turning the chicken regularly so the skin caramelises and the juices remain in the chicken.
For the salad, mix all ingredients together and season with olive oil, salt and lemon juice. Serve with grilled chicken.
