Bacon Wrapped Salmon BBQ Recipe
Celebrity chef, author & restaurateur, Adrian Richardson, cooks his Bacon Wrapped Salmon BBQ Recipe on highly rated TV show Good Chef Bad Chef.
- 10 slices bacon
- 1kg salmon fillet, cut into 10 x 100gm pieces
- 2 tablespoons olive oil
- 2 tablespoons thyme, chopped
- ¼ cup parsley, chopped
- zest of 1 lemon
- salt and freshly ground black pepper
In a bowl, form a marinade by mixing together the olive oil, thyme, parsley, salt, pepper and lemon zest.
Place the pieces of salmon into the bowl and coat generously with the marinade.
Wrap each piece of salmon with a slice of bacon. Then use a skewer to help hold it in place.
Grill on heated BBQ until cooked through and bacon is nice and crisp.
