Hello summer season!
Sweaty palms, shaky knees, inability to focus on anything. Yup, it’s the day before the official Aussie summer season and we can’t wait. We’ve made a pledge to spend even more time outdoor entertaining this year – let’s hope the weather prevails!
Whilst the versatility of chargrilling means we can barbecue chocolate, tofu, cheese and everything in between, let’s focus on some classic favourites this year and really get them right.
Roast Leg of Lamb BBQ Recipe
Adrian keeps this simple with garlic and rosemary, with a baste made with honey and lemon. Remember, the best way to test for doneness is by using a meat thermometer.
Beer Can Chicken BBQ Recipe
It’s not every day you get to stuff a beer can up a chicken’s behind. Seize the opportunity.
But seriously, chicken flesh will never taste this tender, and you can be sure the skin will be perfectly golden and crisp.
Cedar Planked Salmon BBQ Recipe
If you’re getting bored of your usual repertoire, start experimenting with plank grilling. Planks are easily purchased from your local barbecue shop and will add some serious flavour to your seafood. See also our plank grilling tips.
Cheers to our best summer season yet!
P.S. And for a quick clean up, get your guests to do it for you! Belinda Wheat from Queensland suggests you set up clearly marked bins, make them fancy, and encourage people to use them. Thanks, Belinda!
