Ingredients

  • 2 cups shredded mozzarella cheese
  • ½ cup grated parmesan cheese
  • 1 large egg
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • Salt and black pepper to taste
  • Toppings of your choice (pepperoni, bell peppers, mushrooms, onions, etc.)
  • Olive oil (for brushing)

Method

  1. Prepare the Pizza Dough: In a bowl, dissolve yeast in warm water and let sit for about 5 minutes until foamy. Add 2 ½ cups of flour, salt, and olive oil, then mix until a dough forms. Knead on a floured surface, adding more flour as needed, for about 5-7 minutes until smooth. Place in a greased bowl, cover, and let rise for 1 hour or until doubled in size.

  2. Prepare the Cheese Mixture: Start by preheating your BBQ using Heat Beads Lump the grey bag for medium heat. In a mixing bowl, combine shredded mozzarella, grated parmesan, egg, dried oregano, garlic powder, salt, and black pepper. Mix well until everything is fully combined.

  3. Prepare the Pizza Dough for Topping: Roll out your dough on a floured surface to your desired thickness.

  4. Fill the Edges: Spoon the cheese mixture around the edges of the dough, creating a thick layer about 1 inch wide.

  5. Fold and Seal: Carefully fold the outer edge of the dough over the cheese mixture, pinching and sealing it to create a stuffed crust. Make sure it’s well-sealed to prevent any cheese from leaking out during cooking.

  6. Grill the Pizza Base on a Pizza Stone: Place a pizza stone on the BBQ and preheat it along with the BBQ. Once hot, carefully place the stuffed pizza dough on the stone (no need to flip!). Close the lid and cook for about 10-15 minutes, allowing the bottom to set and the crust to begin turning golden.

  7. Add Your Toppings: Once the crust has begun to set, open the BBQ lid and add your favorite toppings to the center of the pizza. Brush the sealed crust edges with olive oil for extra flavor.

  8. Finish Cooking: Close the BBQ lid and cook for an additional 5-10 minutes, or until the cheese is melted, the toppings are cooked through, and the crust is golden brown.

  9. Serve and Enjoy: Remove the pizza from the BBQ, let it cool slightly, then slice and serve for a cheesy BBQ experience that will wow your guests!
