Prosciutto-Wrapped Brie Block
A whole brie wrapped in prosciutto with rosemary and thyme, baked on the BBQ with a touch of smoke until gooey. An easy entertaining starter.

Ingredients
- Brie block: 1 (serves 4)
- Prosciutto: 8 slices
- Olive oil: 2 tablespoons
- Fresh rosemary: 2 sprigs (optional)
- Fresh thyme: 2 sprigs (optional)
- Salt: 1 teaspoon
- Black pepper: 1 teaspoon
Method
Prepare the BBQ: Set up your BBQ for indirect heat, using Heat Beads Briquettes (Green Bag) and a Heat Beads Cherry Chunk for a smoky flavor. Aim for a temperature of 180°C (350°F).
Wrap the Brie: Take a wheel of Brie and wrap it tightly with prosciutto slices, making sure it's fully covered. Brush the wrapped Brie with olive oil, then season with salt and black pepper. Tuck a few sprigs of fresh rosemary into the prosciutto for extra flavor.
Grill the Brie: Place the prosciutto-wrapped Brie on the cooler side of the grill. Cook for 15-20 minutes, until the cheese is soft and gooey inside, and the prosciutto is golden and crispy.
Rest Before Cutting: Remove the Brie from the grill and let it rest for 5 minutes. This allows the cheese to settle slightly, preventing it from spilling out too quickly when sliced.
Serve with Biscuits: Carefully slice into the Brie and serve it warm with a side of crackers or biscuits for dipping. Enjoy this rich, smoky, and indulgent BBQ starter!
