Grilled Bone Marrow butter on steak
Roast bone marrow on the BBQ and whip it into garlic and parsley butter to melt over a hot-seared ribeye or sirloin. Rich, beefy and easy to make.

Ingredients
- bone marrow bones
- Steak (ribeye or sirloin)
- 100g butter
- 3 garlic cloves
- 2 tablespoons fresh parsley
- Salt and pepper to taste
- Bone marrow (bones cut lengthwise) (from original sheet)
- Steak (e.g., ribeye, sirloin) (from original sheet)
- Salt/rub (from original sheet)
- Black pepper (from original sheet)
- Optional Side: Garlic mashed potatoes (from original sheet)
Method
Sear the Steaks: Crank the heat up on the BBQ to 482°F (250°C). Season those steaks with your go-to rub or just a good amount of salt and pepper. Sear them on the hot grill for 3-4 minutes each side until they’re that perfect medium-rare. Aim for an internal temperature of the meat of 57°C (135°F).
Finishing Touch: Take the steaks off and let them rest for 5 minutes to lock in those juices. Then, drop a huge scoop of your bone marrow butter right on top and hit it with a blowtorch for that extra melt and char.
