Camp oven cooking tips: Damper
OzWit.com is the brainchild of two Australian families who took their entire brood on a 3 year road trip around Australia. As you can imagine, they’ve gathered some great camp oven tips and recipes – most of which have been compiled into two handy publications: Cooking with Camp Ovens and Fair Dinkum Dampers.
Here’s a snippet from Fair Dinkum Dampers on the quantity of Heat Beads® Briquettes to use when baking damper…
“As a guide, we use twice the number of briquettes as the diameter (in inches) of the camp oven. Generally, we like to cook everything at a constant 180°C (350°F).
For a 12″ camp oven place 9 briquettes on the bottom & 15 on top, making the total of 24 (which is double the diameter of the 12″ camp oven).
Similarly, for a 14″ camp oven place 11 briquettes on the bottom & 17 on top.
This should give the camp oven a constant temperature for about 30-45 minutes. If you are cooking a stuffed damper, you may need to add a couple more briquettes.”
