Grilling with mushrooms

Who would have thought a type of fungi would taste so good? Lay it gently on the grill and let the smoke and the high dry heat engulf it with layers of incredible flavour.

Here are our top tips for grilling with mushrooms…

1) When picking mushrooms at the grocer, select mushrooms that are firm with no bruises.
2) If you can see the gills, check that they are tight (the gills spread open as the mushroom ages).
3) If required, trim off the hard end of the stem.
4) To clean, wipe gently with a damp cloth/paper towel/soft bristled brush.
5) Don’t clean mushrooms until you’re ready to use them; these delicate morsels deteriorate quite quickly.
6) Be wary of pre-packed pre-cut mushrooms for the above reason; unless you’re sure you’re going to use the entire pack within a short time.
7) Store mushrooms in the fridge in a paper bag (available at the mushroom section of the grocer).
8) Don’t peel mushrooms – it takes away the flavour!
