June Winter Roast Series: Pork

If you’re just joining us this week, then welcome to our June Winter Roast Series. Last week we covered the set up. Today, let’s talk pork.

Golden crackling
Crispy, seasoned crackling is one of the best bits of roast pork. The meat itself needs a high heat, but even more so if you want crackling. In the Weber Kettle, you need to fill your baskets until they are heaped (approximately 2.6kg of briquettes).

Remember to only buy pork with white skin (not yellow/brown) and ensure there is a good layer of fat underneath it. Learn more at Crackling Pork BBQ Recipe.
